Even if you can’t find it fresh, frozen molokhiya works just as well—bringing this comforting dish to kitchens around the world. We’re excited to share a delicious molokhiya recipe courtesy of Fufu’s Kitchen.
What is Molokhiya?
Molokhiya is a soft, garlicky green often simmered with lemon and spices and served with rice and chicken or lamb. It’s rich in nutrients and deep in cultural significance—prepared often in family gatherings and steeped in Palestinian tradition.

Ingredients
For the Chicken:
- 2 large chicken breasts (or bone-in/dark meat)
- Salt, pepper, garlic powder, paprika, ground coriander
- 1 small onion (quartered), 2 bay leaves, 4 garlic cloves
For the Molokhia:
- 2 frozen molokhia bags (14 oz each)
- 1.5 cups chicken broth (use more if needed)
- Salt, olive oil, 4 minced garlic cloves
For the Lemon-Garlic Topping (Salsa):
- ½ jalapeño
- Juice of 1 small lemon
- 2 garlic cloves
- 2 tbsp olive oil
- Pinch of salt

Cook the Chicken:
Season chicken, cover with water, add onion, bay leaves, and garlic. Boil then simmer for 25 mins. Shred once cool. Strain and keep broth. -
Make the Molokhia:
Add fresh or frozen molokhia and broth to a pot. Add salt and simmer for 10 mins until blended. -
Prepare the Topping:
Blend jalapeño, lemon juice, garlic, salt, and olive oil into a salsa. -
Final Touch:
Sauté minced garlic in olive oil until golden. Stir into molokhia with the shredded chicken. -
Serve:
Over rice with salsa and lemon wedges.
