Spring in Palestine is a season of quiet abundance. Along hillsides and village paths, wild greens appear—gifts from the land, or ard khair. For generations, families have foraged loof, khubayza, and warik ilsan, turning simple ingredients into deeply nourishing meals.

It’s Khubayza Season
Khubayza (mallow) is a spring favourite—soft, earthy, and full of comfort. It grows freely, but in Palestinian kitchens, it’s treasured. Cooked slowly with olive oil, onion, and garlic, it becomes something rich and deeply satisfying.

Simple Khubayza Recipe
You’ll need:
- Fresh khubayza (washed, chopped)
- 1 onion
- 2–3 garlic cloves
- Olive oil
- Salt, lemon (optional)
Method:
Sauté onion in olive oil until soft, add garlic, then khubayza and salt. Cover and cook on low until tender. Finish with a squeeze of lemon. Serve with bread.
Simple food. Deep roots. A taste of the land.
