Qatayef: The Sweet Taste of Ramadan

Qatayef is a beloved Palestinian dessert, traditionally stuffed with cheese, walnuts, or sweet cream and drizzled with syrup. Making qatayef is more than just cooking—it’s a shared tradition, often prepared together as a family, filling homes with the scents of cardamom, cinnamon, and rosewater.

Qatayef Recipe

Ingredients:

  • 2 cups flour
  • 1 ½ cups warm water
  • 1 tbsp sugar
  • 1 tbsp dry yeast
  • ½ tsp baking powder
  • ½ tsp salt

Filling Options:

  • Cheese (sweet ricotta or Akkawi)
  • Walnut Mixture (1 cup chopped walnuts, 2 tbsp sugar, ½ tsp cinnamon)
  • Ashta (Sweet Cream)

Instructions:

  1. Mix all dry ingredients, then slowly add warm water while stirring. Let the batter rest for 30 minutes.
  2. Heat a non-stick pan and pour small circles of batter. Cook on one side only until bubbles form and the top is dry.
  3. Fill each qatayef with your preferred filling and pinch the edges to seal.
  4. Either fry until golden or bake for a lighter option. Drizzle with simple syrup (sugar, water, lemon juice, rosewater).
