Qatayef: The Sweet Taste of Ramadan
Qatayef is a beloved Palestinian dessert, traditionally stuffed with cheese, walnuts, or sweet cream and drizzled with syrup. Making qatayef is more than just cooking—it’s a shared tradition, often prepared together as a family, filling homes with the scents of cardamom, cinnamon, and rosewater.
Qatayef Recipe
Ingredients:
- 2 cups flour
- 1 ½ cups warm water
- 1 tbsp sugar
- 1 tbsp dry yeast
- ½ tsp baking powder
- ½ tsp salt
Filling Options:
- Cheese (sweet ricotta or Akkawi)
- Walnut Mixture (1 cup chopped walnuts, 2 tbsp sugar, ½ tsp cinnamon)
- Ashta (Sweet Cream)
Instructions:
- Mix all dry ingredients, then slowly add warm water while stirring. Let the batter rest for 30 minutes.
- Heat a non-stick pan and pour small circles of batter. Cook on one side only until bubbles form and the top is dry.
- Fill each qatayef with your preferred filling and pinch the edges to seal.
- Either fry until golden or bake for a lighter option. Drizzle with simple syrup (sugar, water, lemon juice, rosewater).
