In Palestine, coffee is more than a drink. It is a gesture of welcome, a sign of generosity, and an important part of everyday life.

When a guest arrives at your home, one of the first things you might be offered is a small cup of Arabic coffee, known as finjan ahwa. It is traditionally served strong and bitter, with the coffee grounds settling at the bottom of the cup. In moments of mourning, coffee is served without sugar — sadda, or plain — as a quiet expression of grief.

The coffee is prepared with care, usually in a traditional brass breek (coffee pot). Water is brought to a boil before the finely ground coffee is added, along with sugar according to taste. The pot is then returned to the fire and lifted off again several times — traditionally three — allowing the coffee to foam and develop its rich flavour. Before serving, it is left to rest so the grounds can settle. 

Then comes the ritual of serving.

The coffee is poured into small cups and carried on a tray, offered first to guests and elders. Cups are usually filled only a little at a time, making it easy to accept another pour. In many Palestinian homes, refusing coffee can feel like refusing the welcome itself.

Finjan is a small cup, but it carries a lot of meaning. It is hospitality, conversation, celebration, and remembrance — a simple ritual passed from one generation to the next.
